  • 8 sheets of rice paper
  • handful of mint leaves
  • handful of strawberries
  • 2 kiwis
  • 1 apple
  • 1 mango
  • 1/2 block cream cheese
  • 1 cup heavy cream (125g) softened
  • 1/2 lime juiced
  • 12 tbsp of honey

Instructions

  1. Prepare the fruit by chopping it into thin strips or slices.
  2. Soak a sheet of rice paper in water for 1 second on each side; place it on a flat surface.
  3. Fill the rice paper with fruit slices and mint leaves, being careful not to overfill.
  4. Fold the ends of the rice paper and roll it tightly to make the spring roll.
  5. Repeat until all ingredients are used.
  6. For the dip, whip heavy cream until almost stiff, then mix in softened cream cheese, lime juice, and honey until well combined.
