  • 150g baby plum tomatoes
  • 100g feta cheese
  • 100g Kalamata olives
  • 75g cucumber
  • 75g green pepper
  • Fresh parsley
  • Red onion
  • Garlic
  • Extra virgin olive oil
  • Red wine vinegar

Instructions

  1. In a large bowl, whisk together olive oil, red wine vinegar, diced parsley, oregano, salt, and pepper.
  2. Add halved tomatoes, cubed feta, olives, diced onion, and garlic. Mix well and let it marinate for at least an hour.
  3. Cook the orzo in salted boiling water until al dente; drain and rinse under cold water.
  4. Combine the cooled orzo with the marinated ingredients.
  5. Stir in diced cucumber and green pepper; finish with lemon juice.
