  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 cup mango (cubed)
  • 3 tablespoons lime juice
  • 2 tablespoons canola oil
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon Sriracha
  • 3 cloves garlic (minced)
  • Kosher salt

Instructions

  1. Prepare the marinade by blending mango, lime juice, fish sauce, canola oil, brown sugar, Sriracha, garlic, and salt until smooth.
  2. Transfer the marinade to a large Ziploc bag and add the chicken. Massage to coat thoroughly and refrigerate for at least 4 hours or overnight.
  3. Preheat your grill to medium heat.
  4. Remove chicken from the marinade (reserve it) and grill for about 10 minutes per side or until the internal temperature reaches 165°F.
  5. In a saucepan, simmer the reserved marinade with water for at least 5 minutes.
  6. Serve the grilled chicken with warm mango sauce and lime halves on the side.
