  • ¾ cup unsalted butter
  • 1 cup all-purpose flour
  • 2 ribs celery, chopped
  • 1 large yellow onion, chopped
  • 1 large green bell pepper, chopped
  • 10 cups beef broth
  • 1 ring andouille sausage, sliced
  • 3 pounds medium shrimp, peeled and deveined
  • Cooked white rice (for serving)

Instructions

  1. In a large pot over medium-low heat, melt butter and whisk in flour until smooth. Cook until deep brown (30–40 minutes).
  2. Cool the roux slightly before adding finely chopped celery, onion, bell pepper, and garlic; cook until tender.
  3. Gradually whisk in beef broth; bring to a boil then reduce heat to low.
  4. Stir in sausage, stewed tomatoes, tomato sauce, hot sauce, sugar, Cajun seasoning, thyme leaves, and bay leaves. Simmer uncovered for about 45 minutes.
  5. Add shrimp and Worcestershire sauce; cook gently for another 45–60 minutes.
  6. Serve hot over rice.
