  • ¼ cup butter, melted
  • ½ cup Greek yogurt
  • ¼ cup maple syrup
  • ½ cup milk
  • 1 cup grated zucchini (about one medium zucchini)
  • 2 eggs

  • 1 and ¾ cups white whole wheat flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 425°F (220°C) and line a muffin tin with liners.
  2. Grate the zucchini, squeeze out excess moisture, and set aside.
  3. In a bowl, mash bananas and mix in melted butter, Greek yogurt, maple syrup, milk, eggs, and vanilla until well combined. Stir in the grated zucchini.
  4. In another bowl, whisk together flour, cinnamon, baking soda, baking powder, and salt.
  5. Fold dry ingredients into wet mixture gently until just combined; avoid overmixing.
  6. Fill muffin cups about three-fourths full with batter.
  7. Bake at 425°F for the first five minutes; then reduce temperature to 350°F (175°C) and continue baking for an additional 20–22 minutes until a toothpick comes out clean.
