  • ½ teaspoon chili powder
  • 1 cup long-grain white rice (uncooked)
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 2 cups chicken broth (low sodium preferred)
  • Salt and black pepper to taste
  • ¼ cup fresh cilantro (chopped)
  • 1 lime (cut into wedges)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Add sliced smoked sausage and cook for about 5 minutes until browned.
  3. Stir in diced onion, bell pepper, and minced garlic; sauté for 3–4 minutes until softened.
  4. Season with cumin, smoked paprika, oregano, and chili powder; stir well.
  5. Add uncooked rice and drained black beans; pour in chicken broth and season with salt and pepper.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked through.
  7. Fluff rice with a fork before serving; top with chopped cilantro and serve lime wedges on the side.
