  • ¼ cup unsalted butter for caramel
  • ⅓ cup light brown sugar for caramel
  • ¼ teaspoon flaky sea salt for caramel

Instructions

  1. Prepare the salted caramel by melting ¼ cup unsalted butter and ⅓ cup light brown sugar in a saucepan over medium heat. Stir in ½ cup heavy cream and let thicken. Set aside to cool.
  2. In a bowl, whisk together 2 ¼ cups all-purpose flour, 2 tablespoons cornstarch, ½ teaspoon baking soda, and ¼ teaspoon fine sea salt.
  3. Beat together ¾ cup softened unsalted butter, ¾ cup packed light brown sugar, and ¼ cup granulated sugar until fluffy. Add 1 large room-temperature egg and 1 teaspoon pure vanilla extract; mix well.
  4. Gradually combine dry ingredients into wet mixture until just mixed. Fold in warm caramel gently.
  5. Preheat oven to 350°F (175°C). Drop cookie dough onto lined baking sheets and bake for 12-14 minutes until edges are golden.
