  • ½ cup water
  • 80g unsalted butter
  • ½ tsp salt
  • 2 tsp sugar
  • 150g all-purpose flour
  • 4 eggs
  • 2 cups milk (for cream filling)
  • 2 eggs (for cream filling)
  • â…” cup sugar (for cream filling)
  • 50g cornstarch
  • 2 tsp vanilla extract
  • ¾ cup unsalted butter (room temperature, for cream filling)
  • Powdered sugar (for garnish)

Instructions

  1. Prepare the choux pastry by heating milk, water, butter, salt, and sugar in a saucepan until boiling. Stir in flour until it forms a ball; let cool slightly before mixing in eggs one at a time.
  2. Preheat your oven to 375°F (190°C). Spread half of the choux mixture onto two lined baking sheets and bake for about 30-35 minutes until golden brown.
  3. For the cream filling, heat milk until just boiling. Whisk together eggs, sugar, cornstarch, and vanilla in a bowl; gradually add hot milk while whisking. Cook until thickened and then allow to cool.
  4. Assemble by placing one layer of choux on a platter, spreading the cooled cream over it, topping with the second layer of choux, and dusting with powdered sugar.
