  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine with water, bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and let cool.
  2. In a large bowl, combine cooled quinoa with chickpeas, cucumber, red onion, and parsley; mix gently.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss gently until well coated.
  5. Serve chilled or at room temperature; add feta cheese if desired.
