  • 8 large lemons (washed and sliced)
  • 1 cup Sucanat
  • 10 sprigs fresh mint
  • 2 sprigs fresh rosemary (plus extra for garnish)
  • 1/2 vanilla bean (scraped seeds) or 2 teaspoons vanilla extract
  • 8 cups cold water
  • Ice

Instructions

  1. Prepare a medium mesh strainer over a bowl.
  2. Scrape the seeds from the vanilla bean into a small bowl, keeping the pod.
  3. In the strainer, combine lemon slices, Sucanat, mint sprigs, rosemary sprigs, vanilla seeds, and pod.
  4. Gently massage the lemon slices to release juices.
  5. Cover with plastic wrap and refrigerate for 3-4 hours or overnight.
  6. Massage the mixture again to extract more juice; strain solids.
  7. Mix the collected juice with 8 cups of cold water in a large pitcher.
  8. Serve over ice and garnish with additional rosemary if desired.
