  • 6 small crisp ripe peaches, pitted and quartered
  • 8 oz mozzarella pearls
  • 4 oz prosciutto
  • 12 basil leaves
  • 1 cup white balsamic vinegar
  • 1/2 cup white vinegar
  • 1 cup water
  • 2 teaspoons kosher salt
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • herbs from pickling liquid, minced
  • salt and pepper to taste

Instructions

  1. Prepare the pickling liquid by heating white balsamic vinegar, water, kosher salt, and honey until dissolved. Allow to cool.
  2. Place peach slices into a jar with rosemary and thyme; pour the pickling liquid over them. Let sit for 30 minutes.
  3. Assemble skewers by wrapping peach slices in prosciutto and alternating with basil leaves and mozzarella pearls.
  4. Make the dressing by whisking together reserved pickling liquid, olive oil, minced garlic, salt, and pepper.
  5. Drizzle dressing over skewers before serving.
