  • 2/3 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup butter (melted)
  • 1 large egg
  • 1 1/2 cups grated zucchini
  • 1 1/2 cups semi-sweet chocolate chips

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together quick oats, flour, cocoa powder, baking soda, salt, cinnamon, and brown sugar.
  3. In another bowl, mix melted butter, egg, and vanilla until combined.
  4. Combine wet and dry mixtures; then fold in grated zucchini and 1 cup of chocolate chips until well mixed.
  5. Drop rounded tablespoonfuls of dough onto the prepared baking sheets and flatten slightly. Top with additional chocolate chips if desired.
  6. Bake for 12-15 minutes or until cookies are set around the edges but still soft in the center. Allow to cool before transferring to wire racks.
