  • 1 1/2 cups all-purpose flour
  • 1/2 cup oats (rolled or quick)
  • 1/2 cup brown sugar
  • 1/2 cup sliced almonds
  • 6 oz unsalted butter (cold, cubed)
  • 2 medium peaches (peeled, sliced)
  • 3/4 cup raspberries
  • 1/2 lemon (juiced)
  • 2 teaspoons vanilla extract
  • 1/2 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine flour, oats, brown sugar, almonds, and salt. Add cold butter and pulse until the mixture resembles coarse crumbs.
  3. Press two-thirds of the crumble into the bottom of a greased 9×9 inch baking pan.
  4. In a bowl, toss peaches, raspberries, lemon juice, vanilla extract, granulated sugar, and flour together until coated.
  5. Spread the fruit mixture over the crust evenly.
  6. Top with remaining crumble mixture.
  7. Bake for about 55 minutes or until golden brown on top.
  8. Allow to cool completely before cutting into squares.
