Pesto Chicken and Avocado Turkey Bacon Salad Wraps are a flavorful and nutritious choice for a quick lunch or dinner. These wraps combine tender grilled chicken breast, creamy avocado, and crispy turkey bacon, all enhanced by zesty pesto sauce.

  • 2 boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 ripe avocado, sliced
  • 1 cup mixed salad greens (arugula, spinach, or baby kale)
  • 4 whole wheat tortillas
  • 23 tablespoons pesto sauce
  • ½ cup cherry tomatoes (halved, optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Preheat a skillet over medium heat. Rub chicken breasts with olive oil and season with salt and pepper. Cook for 5-7 minutes on each side until fully cooked.
  2. In another skillet, cook the turkey bacon until crispy, about 2-4 minutes per side.
  3. Lay out a whole wheat tortilla; spread pesto sauce evenly on it.
  4. Slice cooked chicken into strips; place in the center of the tortilla with crispy Turkey bacon.
  5. Layer sliced avocado and mixed greens on top; add cherry tomatoes if desired.
  6. Drizzle with lemon juice (optional), roll tightly to secure fillings, and slice in half to serve.
