  • 15 ounces mini marshmallows
  • 8 tablespoons unsalted butter
  • 1 box (3.4 ounces) pistachio pudding mix

Instructions

  1. Line a 9×13-inch pan with foil or parchment paper and spray with nonstick cooking spray.
  2. In a large mixing bowl, measure out Rice Krispies cereal.
  3. In a large pot over medium-low heat, melt the unsalted butter. Once melted, add mini marshmallows and stir until completely melted.
  4. Remove from heat and mix in pistachio pudding mix and vanilla extract until well combined.
  5. Pour the marshmallow mixture over the Rice Krispies and stir gently until fully coated.
  6. Transfer to the prepared pan and press down firmly using wax paper sprayed with nonstick cooking spray.
