  • ½ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 2 ½ cups + 2 tablespoons all-purpose flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • â…” cup strawberry preserves
  • 1 cup powdered sugar
  • 1½2 tablespoons whole milk
  • Rainbow sprinkles (for decoration)

Instructions

  1. Preheat oven to 375°F (190°C) and line an 8×8 baking pan with parchment paper.
  2. Cream together butter and granulated sugar until light and fluffy.
  3. Add eggs one by one, then mix in vanilla.
  4. Combine flour, salt, and baking soda; mix until just combined.
  5. Chill dough for about 20 minutes, then press half into the prepared pan.
  6. Freeze the first layer while preparing the second layer with remaining dough and strawberry preserves.
  7. Top with remaining dough and bake for about 25–28 minutes until golden brown.
  8. Cool completely before icing with a mixture of powdered sugar, milk, and vanilla.
