2 ½ cups dry macaroni noodles (cooked and drained)
1 cup diced deli corned beef
1 cup cubed Swiss cheese
1 cup drained sauerkraut
1 cup diced dill pickles
¾ cup Thousand Island dressing
½ cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon sauerkraut brine
Instructions
Cook the macaroni according to package instructions, then drain and rinse under cool water. Set aside to cool completely.
In a bowl, whisk together the Thousand Island dressing, mayonnaise, Dijon mustard, and sauerkraut brine until well combined.
In a large serving bowl, combine the cooled pasta with the dressing mix. Add in the corned beef, Swiss cheese, sauerkraut, and dill pickles. Toss until everything is evenly coated.
Cover and refrigerate for at least an hour before serving to allow flavors to meld.
