  • 1 ½ sticks unsalted butter (very cold, cut into small cubes)
  • ⅓ cup ice-cold water (plus additional if needed)
  • 1 ½ lbs peaches (skin-on, pitted, sliced)
  • ¼ cup sugar
  • 1 Tbsp lime juice
  • 2 Tbsp cornstarch
  • 1 beaten egg (for egg wash)

Instructions

  1. Make the crust: In a food processor, combine flour, salt, and cold butter until crumbly. Add ice-cold water gradually until dough forms. Chill for at least 45 minutes.
  2. Preheat oven to 425°F and prepare a baking sheet with parchment paper.
  3. Roll out the chilled dough into a circle (14–16 inches). Transfer to the baking sheet.
  4. Toss sliced peaches with sugar, lime juice, cornstarch, and salt. Spoon filling onto the crust, leaving a 2-inch border.
  5. Fold the edges over the filling and brush with egg wash. Bake for about 40–45 minutes until golden brown.
