  • 4 tbsp breadcrumbs
  • 1 tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 egg
  • 1 tsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 yellow onion (diced)
  • 2 garlic cloves (minced)
  • 1 tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 tsp dried thyme
  • ¼ cup dry white wine (or beef or chicken broth)
  • 1 ¼ cups heavy cream
  • ½ cup grated Parmesan
  • 1 tsp horseradish (more to taste)
  • chopped chives (for serving)

Instructions

  1. Combine ground beef, egg, breadcrumbs, salt, pepper, dried onion, and Dijon mustard in a mixing bowl. Form into four equal patties.
  2. Heat olive oil and butter in a large skillet over medium-high heat; sear the patties for about 5 minutes on each side until browned.
  3. Remove patties and set aside. In the same skillet, sauté diced onions and minced garlic until fragrant.
  4. Deglaze with white wine or broth, scraping up any brown bits from the pan.
  5. Stir in heavy cream, horseradish, and Parmesan cheese until combined. Simmer until slightly thickened.
  6. Return the patties to the skillet to warm through before serving.
