  • 1/2 cup fresh orange juice
  • 1/3 cup fresh lime juice
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 3 tablespoons apple cider or red wine vinegar
  • 4 garlic cloves (minced)
  • 23 pounds skirt steak
  • Salt and pepper to taste
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 1/41/3 cup olive oil
  • 1/2 medium onion (diced)
  • 3 garlic cloves
  • 3 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. In a mixing bowl, whisk together olive oil, orange juice, lime juice, soy sauce, minced garlic, salt, and pepper.
  2. Place the skirt steak in a resealable bag or dish and pour the marinade over it. Seal and refrigerate for at least 6 hours or overnight.
  3. To make chimichurri, combine parsley, cilantro, olive oil, garlic cloves, lime juice, red wine vinegar, salt, and pepper in a food processor. Pulse until finely chopped.
  4. Preheat the grill to medium-high heat. Remove the steak from the marinade and grill for about 5 minutes per side or until desired doneness.
  5. Let the steak rest before slicing against the grain and serving with chimichurri on top.
