  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup chopped green onions
  • 3 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon gochujang
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1/2 cup mayonnaise
  • 1 to 2 teaspoons sriracha
  • 1 teaspoon sesame seeds (optional for garnish)
  • Extra green onions for garnish

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, green onions, garlic, ginger, soy sauce, sesame oil, and gochujang. Mix until just combined.
  2. Shape into 1 to 1.5-inch meatballs and place on a tray.
  3. Heat oil in a skillet over medium heat and sear meatballs until browned on all sides (about 5-7 minutes).
  4. Transfer meatballs to a baking dish; mix soy sauce, brown sugar, rice vinegar, and extra gochujang in another bowl. Pour over meatballs.
  5. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until fully cooked.
  6. For the spicy mayo dip, combine mayonnaise and sriracha in another bowl.
