  • 1 lb boneless, skinless chicken breasts (diced)
  • 3 Tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup black olives (sliced)
  • 1/4 cup fresh basil leaves (chopped, optional)
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a skillet, heat 2 Tbsp olive oil over medium heat. Add chicken, minced garlic, salt, and spices; cook until chicken is fully cooked (5-7 minutes).
  3. Place pita breads on a baking sheet and brush with remaining olive oil.
  4. Top each pita with chicken mixture, mozzarella, Parmesan cheese, and veggies.
  5. Bake for 8-10 minutes until cheese is melted and edges are golden.
