  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened Dutch-processed cocoa powder
  • 3/4 cup unsalted butter
  • 2 tablespoons canola oil
  • 1 1/2 cups sugar (divided)
  • 1 teaspoon vanilla extract
  • 2 large eggs + 1 egg yolk
  • 2/3 cup semi-sweet chocolate chips
  • Optional: 1/2 to 1 cup M&M's or nuts

Instructions

  1. Preheat oven to 350°F. Line an 8×8 or 9×9-inch baking pan with parchment paper and spray lightly with non-stick spray.
  2. In a bowl, sift together flour, salt, and cocoa powder; set aside.
  3. Melt butter, canola oil, and half of the sugar in a saucepan over medium heat; remove from heat.
  4. In a mixing bowl, whisk eggs and remaining sugar until combined; stir in vanilla.
  5. Gradually whisk warm butter mixture into the egg mixture until smooth.
  6. Fold dry ingredients into the wet mixture just until combined; do not overmix.
  7. Gently fold in chocolate chips and any optional add-ins.
  8. Pour batter into prepared pan and smooth the top. Bake for 30 minutes (9-inch pan) to 40 minutes (8-inch pan), until edges are firm and top is shiny.
  9. Let cool completely before cutting into squares.
