  • 1 cup shredded zucchini (drained well)
  • 1 clove garlic (grated fine)
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • Fresh herbs: chives, parsley, basil, oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly coat a baking sheet with olive oil.
  2. Grate the zucchini using a box grater, then wring out excess moisture using a clean kitchen towel.
  3. In a mixing bowl, combine the drained zucchini with grated garlic, egg, breadcrumbs, cheese, chopped herbs, salt, and pepper. Mix until well incorporated.
  4. Shape the mixture into tablespoon-sized balls and place them on the prepared baking sheet.
