  • 3 medium zucchini (chopped)
  • 1/2 yellow onion (chopped)
  • 1 tablespoon sesame oil
  • 4 garlic cloves (minced)
  • 1 1/2 tablespoons soy sauce
  • 1 1/2 tablespoons teriyaki sauce
  • 1 1/2 tablespoons hoisin sauce
  • 1/2 teaspoon sesame seeds
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. Prepare your vegetables by chopping the zucchini and onion into bite-sized pieces.
  2. In a large skillet or wok, heat sesame oil over medium-low heat. Sauté the onion until translucent (about 3-5 minutes), then add minced garlic and sauté for another minute.
  3. Increase heat to medium and add chopped zucchini along with soy sauce, teriyaki sauce, and hoisin sauce. Stir-fry for about 5-8 minutes until zucchini is tender-crisp.
  4. Remove from heat, garnish with sesame seeds and crushed red pepper flakes, and serve over rice or on its own.
