  • 2/3 cup barbecue sauce
  • 2/3 cup teriyaki sauce
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper
  • 1 sweet onion
  • 3 cloves garlic
  • 1 tablespoon freshly grated ginger

Instructions

  1. In a medium bowl, mix barbecue sauce, teriyaki sauce, minced garlic, and grated ginger. Reserve half a cup for later.
  2. Marinate the chicken in the remaining sauce mixture in a Ziploc bag or bowl for at least 2 hours or overnight.
  3. Assemble skewers by alternating marinated chicken with pineapple, bell pepper pieces, and onion. Brush with canola oil and season with salt and pepper.
  4. Preheat the grill to medium heat. Grill skewers for about 10 minutes or until chicken reaches an internal temperature of 165°F, turning occasionally.
  5. Brush with reserved marinade during the last minute of cooking.
